SANTA FE, New Mexico, January 25, 2022 /PRNewswire/ — Bishop’s Lodge, Inn Resorts Collection announces today the appointment of Pablo Peñalosa as Executive Chef. Chef Peñalosa, who has over a dozen years of culinary and Michelin-starred experience, will set an elevated experience at the property’s signature restaurant, fire from heaven, which redefines “new Mexican cuisine” and takes family recipes and local ingredients to new heights. Culinary offerings will present a global perspective related to the techniques and flavors discovered during his time at Mexico and Spainwhile nurturing the connection between the land, ingredients, manufacturers and farmers with hotel guests and the community in a purposeful way.

Native Mexico City, Chef Peñalosa’s grandmother taught him family recipes that relied heavily on chilies grown in the region and ultimately inspired his desire to pursue the culinary world. His introduction to Spanish culture began while working at El Celler de Can Roca and Martin Berasategui – both 3-star Michelin restaurants – in Spain where he learned the context of the local cuisine and where the dishes and flavors come from. After his stint in Spainhe returned to Mexico City where he was part of the opening team of the famous international restaurant Morimoto.

Chef Peñalosa joins Bishop’s Lodge from Meliá Hotels International Paradisus in Los Cabos, Mexico, where he served as chief executive and led operations during the reopening. Previously, he held several executive chef positions, including the opening of two Four Seasons hotels in ColombiaMNKY HSE in Mayfair, The Intercontinental Hotel Group in London and Los Cabos.

Chef Peñalosa will oversee all culinary outlets, including SkyFire, the signature restaurant, and will push the boundaries to develop unique experiences that offer guests the opportunity to delve deeper into Southwestern gastronomy. Chef Peñalosa is a graduate of the Universidad del Claustro de Sor Juana and speaks Spanish and English.
